Spelt loaves are perfect for eating with savoury items – cheese, meats and smoked salmon. People with a wheat intolerance may be able to eat bread made with spelt flour. The gluten in spelt flour is not as strong as that found in the flour made from modern varieties of wheat. Consequently the bread dough doesn’t benefit from too much kneading and care must be taken not to over-prove the final loaf.

500 g (1 lb) spelt flour, white or wholegrain
300 g (10 fl oz) lukewarm water
2 tbsp honey
2 tbsp sunflower seeds
2 tbsp linseeds (flax seeds)
2 tbsp sesame seeds
2 tsp salt
1 tsp dried yeast
